NoLo Wine
Health-conscious consumers increasingly prefer low-alcohol wine but don’t want to compromise on flavour and aroma. Traditional dealcoholisation technology is expensive that alters taste and is accessible to only a few large wineries in Australia. Our innovative technology produces low-alcohol wine through a pre-fermentation process using food-grade fungi in existing fermentation tanks, eliminating the need for expensive equipment.
The process is between 10 and 1000 times cheaper than the current process. By avoiding dealcoholisation, the wine retains its original taste and aroma, making it a game-changer for small and medium wineries and delivering premium-quality NoLo wine at an affordable price.
