We help the meat industry develop innovative solutions for quality assurance and productivity by applying advanced proteomics to challenges such as animal health, meat quality and safety, and the upcycling of waste streams.

Our multidisciplinary team includes meat scientists, biochemists and structural biologists, each with significant experience in meat quality and mass-spectrometry based proteomics.

Case studies

  • Biomarkers for reducing pH non-compliance in beef carcases. In partnership with Meat & Livestock Australia (MLA), this project aimed to identify predictive biomarkers for pH non-compliance (dark cutting) in beef, a condition that significantly impacts meat quality and industry profitability. Using proteomic profiling of saliva samples, we identified candidate protein markers that discriminate between compliant and non-compliant carcasses. Preliminary modelling shows promising classification performance, supporting further development of a rapid, pre-slaughter diagnostic test.
